Toasted Muesli

A great way to start the day’s walking is a bowl of our freshly made toasted muesli.

Put 1 large tablespoon of manuka honey and 2/3 cup of neutral flavoured oil (I use rice bran) into a pot on a low heat to melt.  Turn the oven onto 180 C.

In a large roasting tray put:

2 cups wholegrain oats

2 cups regular oats

3 cups ribbon thread coconut

1 cup wheatgerm

1 cup sesame seeds

1 cup sunflower seeds

1 cup pumpkin seeds

1 cup chopped mixed nuts, I usually use peanuts and almonds.

Pour over the oil and honey, mix well and roast in the oven for about 15 minutes, turning regularly.

Remove from the oven and add 1 cup whole bran (the sort that looks like little twigs!)

When completely cold add 1 cup chopped dry fruit (look for what is on special at the supermarket and then make nice combinations – apple and cranberry is my favourite).

Store in an airtight container.  Serve with yoghurt, milk and fresh or canned fruit.
